Roasted Beets and Sauteed Beet Greens
Ingredients:
- 1 bunch beets with greens
- olive oil
- 2 cloves garlic, minced
- 2 tablespoons chopped onion
- salt and pepper
- 1 tablespoon red wine vinegar
- potatos, carrots, mushrooms and green onions
- add feta
Directions:
- Preheat the oven to 350° F.
- Wash beets and greens, leaving the skins on, and remove the greens.
- Can also add potatos, carrots, mushrooms and green onions.
- Toss beetroots with olive oil.
- Place beets in baking dish and cover.
- Bake for 45 to 60 minutes.
- Peel beets and slice.
- Saute garlic and onion in olive oil, and cook for a minute.
- Tear the beet greens into small pieces, and add them to the skillet.
- Cook until greens are tender.
- Add salt and pepper.
- Serve the greens and the roasted beets sliced with either red-wine vinegar, butter and salt and pepper.
