Roasted Beets and Sauteed Beet Greens
Ingredients:
1 bunch beets with greens
olive oil
2 cloves garlic, minced
2 tablespoons chopped onion
salt and pepper
1 tablespoon red wine vinegar
potatos, carrots, mushrooms and green onions
add feta
Directions:
Preheat the oven to 350° F.
Wash beets and greens, leaving the skins on, and remove the greens.
Can also add potatos, carrots, mushrooms and green onions.
Toss beetroots with olive oil.
Place beets in baking dish and cover.
Bake for 45 to 60 minutes.
Peel beets and slice.
Saute garlic and onion in olive oil, and cook for a minute.
Tear the beet greens into small pieces, and add them to the skillet.
Cook until greens are tender.
Add salt and pepper.
Serve the greens and the roasted beets sliced with either red-wine vinegar, butter and salt and pepper.
